Dongguan
🍽️ Houjie Sausage
Introduction:
Short Guangdong sausage, wine-savory.
Detailed Introduction:
The Houjie Sausage is a famous Cantonese waxed sausage from Houjie town in Dongguan, Guangdong, known for being short, plump and wine-sweet. Choice pork, about three parts fat to seven lean, is diced and seasoned with wine, sugar, salt and soy, stuffed into natural casings, tied into links and air-dried. Unlike long, slender Cantonese sausages, Houjie ones are short and thick with firm meat; steamed, the cut surface is glossy, wine-scented and savory-sweet in balance. Houjie has a long sausage-making tradition as a major branch of Cantonese cured meats, produced especially in autumn and winter. It suits steaming, stir-frying and claypot rice, its cured aroma infusing the grains. Stocked for gifting and home use before Spring Festival, it is now an iconic Dongguan souvenir and a richly wine-scented taste of Cantonese waxed meats.
