🍽️ Hakka Braised Goose

📍 Province: Guangdong 🏙️ City: Dongguan
Introduction:
Goose braised in Hakka sauce, deeply savory.
Detailed Introduction:
Hakka braised goose is a hearty dish common in the eastern Hakka towns of Dongguan, such as Zhangmutou and Qingxi. Local free-range goose is chopped and first stir-fried until fat renders, then braised with ginger, garlic, fermented black beans, Hakka rice wine, soy sauce and rock sugar over low heat until the sauce thickens and the meat softens. The goose comes out glossy soy-red, tender but not dry, with a rich, sweet-savory sauce and a strong wine aroma, and the skin is collagenously sticky on the lips. Hakka people in Dongguan live in the hilly east and share roots with Hakka communities in Huizhou and Meizhou; their cooking style favors big bowls of braised dishes eaten heartily, and braised goose is a centerpiece at festivals, weddings and funerals. Served with rice and the thick sauce poured over the top, it is deeply satisfying and represents how Hakka mountain flavors have taken root in Dongguan.
