🍽️ Wuyi Smoked Goose

📍 Province: Fujian 🏙️ City: Nanping
Introduction:
Smoked spicy goose, northern Fujian hills.
Detailed Introduction:
Langgu smoked goose is a mountain specialty of Langgu township in the Wuyi Mountains, Nanping, Fujian. Local white geese are braised first, then smoked over tea leaves, rice husks or wood shavings, turning the skin a date-red color, dry and aromatic with smoke. The dish is known for smoke and spice penetrating to the bone: the braising liquid includes chilies and Sichuan pepper, so the firm meat carries salty, spicy, progressively layered flavors. It is a hard dish for hosting and festivals in the mountainous north of Fujian, best served sliced as a cold plate. With Wuyi famed for tea, the tea-smoking lends the goose a subtle tea fragrance, making it a representative of northern Fujian's highland food culture.
