🍽️ Nanchang Simmered Soup
Introduction:
Slow-simmered jar soup, clear and deep.
Detailed Introduction:
Nanchang Simmered Soup is a deeply local soup tradition of Nanchang, Jiangxi, built around earthen-jar cooking. Individual small clay jars are filled with pork ribs, free-range chicken, duck or pig trotter, sometimes with herbs and seasonal vegetables, then placed inside a large charcoal-heated vat and slow-simmered for hours at steady heat. The resulting broth is crystal clear yet surprisingly full-flavored, meat tender, soup clean and naturally sweet, with no heavy seasoning. Single-jar slow simmering over charcoal is the key. It sits at the heart of Nanchang's breakfast pairing of one jar of soup with mixed rice noodles, and a steamy jar in winter is the simple, nourishing comfort of the Gan region.
