🍽️ Wuyi Smoked Goose

📍 Province: Fujian 🏙️ City: Nanping
Introduction:
Tea-region smoked spicy goose.
Detailed Introduction:
Wuyi Smoked Goose is a traditional specialty of the Wuyi Mountains around Nanping, Fujian. Locally free-range white geese are first cured with salt, Sichuan pepper and five-spice powder, then slowly smoked over tea branches or wood chips until the skin turns a deep tan. It carries a clear tea-and-woodsmoke aroma, with firm yet not dry meat that is salty, savory and gently spicy, growing more fragrant the longer you chew. In the tea-growing hills of northern Fujian it is a fixture on festival tables and when hosting guests, usually served cold in slices as a drinking snack, or quickly stir-fried again with chili, ginger and garlic for a stronger kick. Besides tasting Wuyi tea, trying smoked goose is a direct way to experience the mountain region's food culture.
