🍽️ Shajing Oysters

📍 Province: Guangdong 🏙️ City: Shenzhen
Introduction:
Historic Shajing oysters, sweet and plump.
Detailed Introduction:
Shajing Oysters are a traditional prized product of Shajing in Bao'an, Shenzhen, where the Pearl River meets the sea in brackish water ideal for fat, milky, sweet oysters with little briny aftertaste. Oyster farming here has deep roots, and discarded shells were once used to pave roads and build walls, leaving a distinctive oyster-shell-house heritage. They are enjoyed in many ways: charcoal-grilled with garlic and lemon, steamed with garlic and glass noodles to highlight tenderness, or sun-dried into dried oysters for congee. The meat is rich, smooth and plump, bursting with ocean flavor. In autumn and winter when oysters are at their best, seafood restaurants and stalls around Shajing fill up, making it the place in Shenzhen to taste authentic Pearl River oysters.
