Pingyao Beef is a famous product of Pingyao in central Shanxi, known for braising and air-drying. Choice yellow-beef is cured, braised and air-dried, cutting into rosy, fine-grained, tender yet intact meat. Well balanced in saltiness and rich in beef aroma, it is excellent cold with drinks or stir-fried with rice, deepening as you chew. Pingyao's ancient city was once a hub of Shanxi merchants and banking houses, and its beef spread with that trading network. Today vacuum-packed, it is one of Shanxi's most famous specialties. On the streets of Pingyao's old city, glossy beef in old shops is a tempting sight, and visitors often pair a sliced plate with Fen liquor to taste the meat heritage of the Shanxi merchants' home.
