🍽️ Qingyuan Black-Plume Goose
Introduction:
Qingyuan goose, firm meat for roast or braise.
Detailed Introduction:
Qingyuan Black-Plume Goose is a local breed of Qingyuan, Guangdong, named for the black bristly stripe along its neck and back, and one of Guangdong's famous poultry. It is medium-sized with fine bones, tender fibers and even fat. Qingyuan cooks prepare it in several ways: the classics are soy-braised goose and roast goose—the braised is rich with sauce and smooth, the roast crisp-skinned and aromatic. In either style, the meat is firm yet not dry, with a pronounced goose flavor that ordinary geese lack. It often appears as a grand banquet or festival dish and has spread across the Pearl River Delta with Cantonese cuisine. At Qingyuan farm restaurants, freshly killed and cooked goose with local rice wine is a reason diners drive out specially. Alongside Qingyuan chicken, it represents the fine ingredients raised in the mountain-water countryside of northern Guangdong.
