🍽️ North River Fresh Fish

📍 Province: Guangdong 🏙️ City: Qingyuan
Introduction:
North River small fish/shrimp, best steamed.
Detailed Introduction:
North River Fresh Fish is the umbrella name for the river-cuisine of Qingyuan, along the Beijiang River in northern Guangdong, prized for its small, wild catches. The Beijiang's clear waters yield small river fish, shrimp, clams and freshwater mussels; the local cooking method is mostly plain steaming or quick blanching, which best preserves their natural sweetness. A steamed bian fish or heshun fish needs only scallion, ginger, hot oil and light soy—tender, sweet, nearly mud-free. Blanched river shrimp are crisp and bouncy, dipped in premium soy. Wild, caught and cooked at once is the rule; floating fish restaurants on the river pull ingredients live from the water. The cuisine does not rely on bold seasoning but on the clean sweetness of the river and precise heat—a representative of northern Guangdong's river food culture.
