Tacheng
🍽️ Air-Dried Meat
Introduction:
North Xinjiang air-dried meat, savory stew.
Detailed Introduction:
Air-Dried Meat is a long-preserved specialty of the pastoral areas around Tacheng in northern Xinjiang, born of nomadic wisdom for storing meat through winter. Beef or mutton is cut into long strips, lightly salted and hung in a cool, airy place to dry naturally, slowly dehydrated by the region's cold, dry, windy climate. The finished meat turns deep red and firm, keeps well, and develops a concentrated, rich flavor. It is usually cut up and stewed, or steamed and stir-fried; after simmering it is savory and deep, rewarding every chew, especially with belt noodles or potato. On the farm-pasture fringe of northern Xinjiang, various ethnic herding communities make it year-round, and it is both a home store and a festive treat that distills the nomads' tradition of living with the seasons.
