🍽️ Charcoal Oysters

📍 Province: Guangdong 🏙️ City: Zhanjiang
Introduction:
Oysters grilled with garlic, juicy and sweet.
Detailed Introduction:
Charcoal-grilled oysters are the most compelling signature of Zhanjiang's night-market dai pai dongs. The coast around Zhanjiang is one of Guangdong's major oyster regions, producing thin-shelled oysters with fat, brimming meat. Each oyster is shucked on the half shell, topped with generous gold-and-silver garlic—half fried until fragrant, half raw—a sprinkle of bird's-eye chili and scallion, then grilled over charcoal until the juice bubbles and the garlic aroma rises. Served still in the shell, you first sip the steaming, briny liquor, then eat the tender, springy meat. On summer nights in Zhanjiang, friends gather around street stalls, eating oyster after oyster with iced beer. The dish reflects the city's standing as China's seafood capital and is one of the most smoky, lively tastes of Zhanjiang's nightlife.
