Zhanjiang
🍽️ Boiled Dog
Introduction:
Leizhou-style plain-boiled dog with ginger dip.
Detailed Introduction:
Boiled Dog is a traditional flavor of the Leizhou Peninsula in Zhanjiang, Guangdong, and a distinctive item of western Guangdong food culture. Local dog meat is boiled whole in clear water with ginger, scallion and dried tangerine peel until just done to keep the meat tender, then chopped and arranged on a platter with springy skin and pale flesh. Leizhou diners insist on a dip of sand-ginger mince, light soy, sesame oil and chili, where the aromatic sand ginger is the soul. The meat is firm and not gamey, skin springy and flesh smooth, lifted by the savory dip. It is common at Leizhou open-air eateries, especially as a winter warming food. It should be noted that eating dog is widely controversial today; this entry records the local tradition objectively as preparation and flavor, without endorsement. Alongside Zhanjiang oysters and white-cut chicken, it forms the unique, strongly regional food customs of the western Guangdong coast.
