🍽️ Zhanjiang Poached Chicken
Introduction:
Coastal free-range chicken, silky skin and sweet meat.
Detailed Introduction:
Zhanjiang poached chicken is a leading example of the western-Guangdong white-cut school. It uses locally free-range coastal walk-about chickens from the Zhanjiang area, lightly salted and poached in gently simmering ginger water, then immediately iced to set the skin crisp. The skin comes out glossy yellow and springy, the meat tender and lightly salted, often with a faint pink near the bone—the western-Guangdong standard for perfect doneness. The authentic dip is sand-ginger soy sauce; that distinctive piquancy sets Zhanjiang poached chicken apart from Guangzhou's scallion-ginger version. In Zhanjiang, no banquet or festival is complete without chicken, and a plate of white-cut chicken with rice best shows off the bird's natural flavor. It embodies the western-Guangdong philosophy of cleanness, freshness and tenderness, and represents Zhanjiang as one of Guangdong's great food cities.
