Thick soy milk, Wuzhou breakfast.
Detailed Introduction:
Bingquan Soy Milk is a famous morning drink of Wuzhou, Guangxi, known for being thick, aromatic and smooth. Choice soybeans are soaked, ground, strained and slow-simmered—traditionally with spring or well water—until the milk is so rich it coats the bowl and forms a thin skin on top. It is intensely beany, thick and silky, sweetened to taste or drunk plain. Where three rivers meet, Wuzhou has clean water and has long produced fine soy milk; the Bingquan area takes its name from a famed spring. Locals start the morning at tea houses with fried dough sticks and a bowl of hot, thick soy milk. Rich, warming and beany, it is now sold both at old shops and as instant powder, and is a first cup for visitors to Wuzhou's morning tea culture.
