Wuzhong
🍽️ Sanzi
Introduction:
Hui-style fried dough, crispy and savory.
Detailed Introduction:
Sanzi are traditional Hui fried-dough twists of Wuzhong, Ningxia. Wheat dough is rolled into fine threads, coiled into rings or decorative shapes, and deep-fried to golden crispness. The strands are distinct, shatter on the tongue, salty-sweet and richly oily. They are a festival guest food and tea snack, also soaked in milk tea or mutton soup, soft once wet, crisp when dry. Wuzhong versions prize rested dough and precise frying, thin yet unbroken. Often laid on the tea table at Hui festivals, best with eight-treasure tea, they are a crisp delicacy of northwest Muslim food culture.
