Yueyang Barbecue is the late-night signature of Yueyang, on the shores of Dongting Lake in Hunan, and a world away from Northeast China's grilling style. Dongting aquatic ingredients are its soul: alongside ordinary meat skewers, grilled crucian carp, eel, river snails and shrimp dominate the menu. Ingredients are marinated first, then basted with local chili sauce, dusted with cumin and dry spices over charcoal until the aroma bursts—spicy yet briny, briny yet spicy. On summer nights, Yueyang locals sit at lakeside stalls, skewers in one hand, cold beer in the other, with the lake breeze and view as company. Grills pair perfectly with sucked snails, braised bits and crayfish, completing Dongting's nightlife.
