🍽️ Huangquqiao Stir-Fried Lamb
Introduction:
Stir-fried lamb ribs, northern Ningxia.
Detailed Introduction:
Huangquqiao Stir-Fried Lamb is a famous dish of Huangquqiao town near Shizuishan in northern Ningxia, known for its wok-fired technique and tender young meat. Newborn lamb is chopped on the bone and stir-fried over searing heat in very hot oil with chili, garlic, scallion and soy sauce, moved quickly so the wok breath stays high. The dish comes out glossy red: tender, non-gamey lamb with a lightly charred edge, fragrant with chili, and a tight sauce clinging to every piece. The Yellow-irrigated farms of northern Ningxia raise fine Tan sheep, and the young lamb is especially delicate. It is often ordered and cooked to order in local eateries with rice or steamed rolls, and is a long-standing banquet and drinking accompaniment that shows the boldness of northwestern stir-frying.
