🍽️ Nanxiong Sour Bamboo Duck
Introduction:
Hakka spicy duck with sour bamboo shoots.
Detailed Introduction:
Nanxiong Sour Bamboo Duck is a Hakka classic of Nanxiong, Shaoguan, in northern Guangdong, representing the region's sour-and-spicy Hakka school. Local mallard pieces are stir-fried and braised with Nanxiong's distinctive sour bamboo shoots, dried chilies, garlic and ginger in a bold Hakka-style seasoning. The sour shoots, fermented from local wild bamboo, are pungently aromatic—cutting the duck's gaminess while lifting its savor. The meat absorbs the sour-spicy gravy, coming out firm, dry-fragrant, sour then spicy then savory, with rice. Mountainous northern Guangdong shares the bold, chili-forward tastes of neighboring Hunan and Jiangxi; this duck is a festival and guest-of-honor dish, and a bowl of plain rice with it captures the mountain-country flavor.
