🍽️ Shaoguan Stuffed Tofu

📍 Province: Guangdong 🏙️ City: Shaoguan
Introduction:
North-Guangdong Hakka stuffed tofu with meat filling.
Detailed Introduction:
Shaoguan Hakka stuffed tofu shares its root with the Meizhou version, but differs slightly because of the mountain setting and local ingredients. Shaoguan is hilly, and its tofu is often ground with local mountain spring water, giving a stronger beany aroma; the pork filling is frequently enriched with local dried mushrooms, diced bamboo shoots or river fish paste. The tofu is stuffed, pan-fried until golden on both sides, then braised briefly in a little broth and finished with a thin sauce. The result is lightly crisp outside, soft inside, with a savory filling and the fresh crunch of bamboo shoots, blending bean aroma and meat umami. Hakka people in Shaoguan often make this dish at harvest time and festivals, and it is a reliable rice dish at home. Together with the Meizhou and Huizhou versions, it belongs to the Hakka stuffed tradition, yet carries the special touch of mountain-grown ingredients of northern Guangdong.
