Detailed Introduction:
Wuzhong Hand Meat is the signature dish of Wuzhong, Ningxia, made with local Yanchi Tan-sheep. The mutton is simply boiled in clear water with Sichuan pepper and scallion until tender, the whole point being to taste the meat itself. It is chopped on the bone while hot and eaten by hand, dipped in a garlic-vinegar sauce or pepper-salt. Tan-sheep meat is tender with almost no gamy smell; plainly boiled, it is sweet and fragrant, rich without being greasy. In Wuzhong's Hui-style restaurants, hand-grabbed mutton opens banquets and is sipped down alongside eight-treasure tea. Across Ningxia, hand-grabbed mutton is the yardstick of lamb quality, and Wuzhong's reputation rests on its Tan sheep — an order visitors almost never skip.
