🍽️ Xiezhou Mutton Soak
Introduction:
Yuncheng-style mutton with bread, southern Shanxi.
Detailed Introduction:
Xiezhou mutton soak is a specialty of Yuncheng in southern Shanxi, an area historically linked to Guan Yu. Unlike the Shaanxi style of tearing flatbread into a shared pot, the Yuncheng version tears baked crescent bread into pieces, soaks them in boiling mutton broth and tops them with slices of slow-simmered, fall-apart lamb. The broth, simmered long from lamb bones and meat, turns milky, fresh and free of gaminess, and the soaked bread absorbs every drop. Served with sweet garlic and chili oil, a bowl on a winter morning is deeply warming. A popular breakfast at Yuncheng's morning markets, it reflects the close mutton-soup tradition shared across southern Shanxi and neighboring Shaanxi.
