Hong Kong
🍽️ Cha Chaan Noodles
Introduction:
Custom-topping noodle soup, street style.
Detailed Introduction:
Cart Noodles are Hong Kong's most streetwise noodle soup, dating back to mobile street carts. Diners pick their noodle, oil noodles, thin noodles, flat rice noodles or rice vermicelli, and choose toppings such as fish balls, beef balls, pig skin, radish, shiitake and squid, all in a brisket or fish-ball broth. You pay for what you choose, the bowl is generous, and spicy bean sauce is the signature finish. Simmered stock and perfectly cooked toppings matter, and the build-your-own choice is half the fun. Cart noodles survive in old-street stalls in Mong Kok and Sham Shui Po and even in convenience stores, eaten by office workers at lunch and students late at night. Building a bowl with seven or eight toppings is a small lesson in Hong Kong's flexible, working-class food wisdom.
