🍽️ Chaozhou Braised Goose
Introduction:
Aromatic braised goose from Chaozhou, served with rice vinegar.
Detailed Introduction:
Chaozhou braised goose shares the same lineage as the Shantou version, but places more emphasis on the refined detail of the aged Chaozhou stock. It uses locally free-range lion-head geese, braised in a stock of soy sauce, galangal, garlic, rock sugar and spices such as star anise and cassia, until the skin turns a date-red and the meat stays full of juice. The Chaozhou way to eat it is with a ginger-vinegar dip—glutinous rice vinegar mixed with mashed garlic—tangy and cleansing, slightly different from Shantou's garlic sauce. The goose skin is springy and savory, the meat thick without being dry, and the gizzard and liver offer chewy and custardy contrasts. In Chaozhou, braised goose is the centerpiece at ancestral offerings and banquets, sliced neatly and best eaten with rice or plain congee to show off the braise. Together with the Shantou version, it stands as one of the two great representatives of Chaoshan braised food.
