Chaozhou
🍽️ Chaozhou Spring Roll
Introduction:
Crispy spring roll with mung bean, dried shrimp and pork.
Detailed Introduction:
Chaozhou spring rolls, known locally as chun bing, are a common deep-fried snack along the archway streets of the old city. A thin, pliable wrapper is filled with mung bean paste, diced pork belly, dried shrimp, mushroom and white scallion, rolled into long cylinders and deep-fried until golden and crisp. The shell cracks audibly between the teeth, thin and layered, while the filling inside is soft and savory—the silkiness of mung bean, the brininess of dried shrimp and the moist richness of pork blending together. Unlike northern spring rolls served with sweet sauce, the Chaozhou version is eaten fresh from the fryer, often paired with gongfu tea to cut the oil. It is a seasonal snack around the Qingming festival and a favorite street food for strolling visitors, representing the crisp, fried wheat snacks of old Chaozhou.
