🍽️ Chencun Rice Noodles
Introduction:
Paper-thin rice noodles with soy and peanut.
Detailed Introduction:
Chencun Rice Noodles are a traditional rice-noodle specialty of Chencun Town in Shunde, Foshan, famed for being paper-thin, silky and springy. Rice is stone-ground into a batter and steamed into a translucent sheet thinner than cicada wing, then cut into wide strips. The most authentic way is to steam them briefly, dress with light soy sauce and hot oil, and top with white sesame and scallion—sometimes with fried dough or beef brisket. Each strand slides onto the tongue, carrying a clean rice fragrance and a tender, never mushy bounce; simple soy dressing is already a perfect match. A Shunde staple for over a century, Chencun noodles have traveled with Shunde cuisine around the world and represent the zenith of Cantonese rice-noodle craftsmanship in thinness and silkiness.
