Detailed Introduction:
Jun'an Steamed Pig is a traditional grand dish of Jun'an Town in Shunde, Foshan, usually appearing at festivals, ancestor rites and village feasts with imposing presence. A whole small-to-medium local pig is rubbed inside and out with five-spice powder, salt, sugar and local rice wine, marinated, then steamed whole in a large bamboo basket over fierce heat for a long time. The finished pig has a springy skin and tender meat, a reddish gloss, fat rendered into glistening droplets, and bones infused with wine aroma. A chef carves it tableside, arranging skin, fat and meat on platters, and diners dip it in local white vinegar and ginger to cut the richness. No frying is used; all the savor comes from steaming, giving a result that is rich yet not greasy. It is the centerpiece of Shunde village banquets and a grand taste of Lingnan rural feasting for visitors.
