🍽️ Jinbang Milk Slice
Introduction:
Water-buffalo milk pressed into salty slices.
Detailed Introduction:
The Jinbang Milk Slice is a traditional dairy product from the Jinbang area of Daliang, Shunde, Foshan, Guangdong, made by curding water-buffalo milk into thin pressed slices. Shunde's specialty water-buffalo milk is curdled with a little rice vinegar, then pressed into small, thin, round fan-like slices lightly salted and milky white. Rich, aromatic and gently salty-sweet with a firm texture, the slices can be eaten directly but are most often softened in plain congee, their milk aroma melting into the porridge. Historically a homey, keeping food for congee and meals, it relies on Shunde's high-fat, deeply flavorful buffalo milk. Today it is both a nostalgic Shunde taste and a specialty souvenir for learning about the region's buffalo-milk food culture, standing alongside double-skin milk pudding as a Daliang dairy classic.
