Kaili
🍽️ Sour Soup Rice Noodle
Introduction:
Tomato and litsea sour broth over noodles.
Detailed Introduction:
Sour Soup Rice Noodle is a signature snack of Kaili in southeast Guizhou, home to Miao and Dong communities. Its soul is fermented sour broth, made by naturally fermenting small tomatoes and red chilies in clay jars until the soup turns bright red, tangy and appetite-whetting, finished with a drizzle of litsea (mountain-pepper) oil for a distinctive lemony aroma. Cooked rice noodles are ladled into the broth with minced pork, crisp soybeans and greens. The first sip is bright and zesty, the heat gentle, and the slippery noodles carry the soup well. Across Kaili it is eaten for breakfast and late supper, and is the easiest first taste of the ethnic-minority cooking of southeast Guizhou.
