Zhuhai
🍽️ Doumen Heavy-Shell Crab
Introduction:
Estuary crab with thick roe, salty-sweet.
Detailed Introduction:
Doumen Heavy-Shell Crab comes from the brackish estuarine waters around Doumen, Zhuhai. It is harvested during the moulting stage when a new soft shell lies beneath the old hard one, a rare and precious moment. At this stage the crab body is tender and the roe fat and creamy; simply steamed, the roe sets soft rather than hard, melting sweetly on the tongue while the meat is delicate and savoury with a marine sweetness. Local cooks prize freshness above all and usually steam it plain, offering only a dip of ginger vinegar. Scarce and prized, it is the premium seafood Zhuhai serves to honoured guests, and is best enjoyed in season.
