Zhuhai
🍽️ Hengqin Oyster
Introduction:
Brackish-water oyster, fat and sweet.
Detailed Introduction:
Hengqin Oyster is a premium oyster from Zhuhai's Hengqin area in Guangdong, raised where fresh and seawater meet, which makes it exceptionally plump. The flesh is full, milky-white and sweet with clean ocean depth. It is commonly steamed with garlic and glass noodles, charcoal-grilled, baked with cheese or enjoyed raw, each method aiming to preserve natural sweetness. Water quality and season matter most; autumn and winter yield the fattest oysters. At Zhuhai seaside seafood stalls, locals order Hengqin oysters by the dozen, and grilled oysters with beer are a staple along the waterfront. Hengqin oysters have become Zhuhai's seafood calling card, prized among Cantonese oysters for their brackish-water sweetness.
