🍽️ Ga Noodle Pieces
Introduction:
Hand-pinched noodle bits, Huangshui home food.
Detailed Introduction:
Ga Noodle Pieces are the everyday home noodle of the Huangshui River valley in eastern Qinghai; the word ga means small and neat in the local dialect. Instead of rolling and cutting, the cook pinches bits of dough the size of a fingernail and drops them straight into boiling broth. They may be served in soup, often simmered with lamb, tomato, potato and green pepper in a generous bowl, or stir-fried over high heat with lamb, garlic sprout and chili for a dry, savory toss. The irregular, slightly curled pieces are soft yet pleasantly chewy and soak up the broth. In the multi-ethnic Huangshui valley around Haidong, this is the humble, comforting bowl that Han, Hui and Tibetan families all keep on their own tables.
