Tangshan
🍽️ Ge Zha
Introduction:
Bean-flour fritter, unique to Tangshan.
Detailed Introduction:
Ge Zha is a traditional snack unique to Tangshan, Hebei, rarely found authentically elsewhere and a living symbol of Tangshan food. Mung-bean or mixed-bean flour is made into a thin batter, spread into thin round cakes, cut into pieces, then braised, stir-fried or deep-fried. The common way is stir-fried ge zha with pork, chive and bean sprouts for a strong bean aroma, or braised in soup until soft and broth-soaked. The taste is richly beany, slightly chewy outside and soft within, between pancake and noodle in texture. Tangshan households always serve it at festivals and banquets, as a main or a side. Many folk stories explain the name, but it remains the taste of Tangshan nostalgia. At restaurants and market stalls in Tangshan, fresh griddled ge zha steams hot—a must-try for visitors exploring Tangshan's everyday food.
