🍽️ Hand-grabbed Rice

📍 Province: Xinjiang 🏙️ City: Ili
Introduction:
Mutton, carrot and onion pilaf, glossy and fragrant.
Detailed Introduction:
Hand-grabbed rice (pilaf) is the guest staple of Yili and the Uyghur and Kazakh peoples of Xinjiang. Mutton chunks, shredded carrot and onion are steamed with rice in one pot, turning glossy golden. The mutton is fragrant, the carrot sweet and soft, each grain distinct and oily, often dotted with raisins and apricots. It is oily, savory and faintly fruity-sweet, deeply filling. Yili versions prize rice cooked through but not mushy, translucent oil, with meat stir-fried before steaming. Traditionally eaten by hand, now usually with a spoon, paired with milk tea or a cold salad to cut richness. A festive main dish, a golden basin brought to the table full of western-region warmth.
