🍽️ Hele Crab
Introduction:
Roe-heavy crab, one of Hainan's four famous dishes.
Detailed Introduction:
Hele Crab is caught in the shallow coastal flats around Hele town in Wanning, Hainan, and is one of the province's four famous dishes, celebrated for its extraordinarily full roe. In autumn and winter the shell opens to reveal orange-red roe almost filling the cavity; steamed, the roe is firm, glossy and rich while the white meat is sweet and tightly fibred. Locals prefer it simply steamed with a ginger-vinegar dip to preserve freshness, though it also appears in crab congee or spicy stir-fry. Its roe is far plumper than that of ordinary mud crab, making Hele crab a premium treat for guests in coastal Hainan, best enjoyed at the height of the season.
