🍽️ Popping Corbicula Clams
Introduction:
Yellow-shell clams cooked with oil and salt until they pop open.
Detailed Introduction:
Popping corbicula clams are a signature seafood snack at dai pai dongs in the Taishan and Xinhui areas of Jiangmen. They use yellow-shelled clams harvested from shallow flats at the Pearl River estuary, thin-shelled and tender. The method is strikingly simple: a clay pot is heated with oil, garlic and ginger, the live clams go in with a little oil, salt and rice wine, and the lid is covered for a high-heat steam; as each shell pops open with a bo-bo sound, the dish gets its name. Served in the pot with the juice, the clam meat has absorbed the garlic and wine, sweet, juicy and edged with a slight wok char. On summer nights in Jiangmen, locals eat them with iced beer and even pour the remaining sauce over rice. The method is minimal yet intensely fresh, reflecting the Pearl River Delta idea of cooking river-and-sea ingredients in their purest form, and it is one of the most representative drinking snacks of western Guangdong dai pai dongs.
