Yichun
🍽️ Iron-Pot Goose
Introduction:
Forest-goose stew with potatoes and vermicelli.
Detailed Introduction:
Iron-pot stewed goose is a hearty, rustic dish of the forested Yichun region in Heilongjiang, in the Lesser Khingan range. Geese raised freely in the woods have firm, fibrous, flavorful meat. Goose chunks are stir-fried until fragrant, then slowly simmered in a large iron pot with potatoes, glass noodles and corn segments. The iron pot holds heat so well that the goose becomes tender and well-seasoned without turning dry, while the potatoes go fluffy and the noodles soak up the rich broth. Served bubbling in one big pot, it is generous and warming, ideal against the cold forest climate. A staple hard dish on woodland family tables in autumn and winter, it is also a must-order for visitors tasting the cuisine of the Lesser Khingan.
