🍽️ Satay Noodle

Broth made from satay sauce with seafood and meat, a southern Fujian flavor.

Satay noodles are Xiamen's most representative snack in Fujian. Their soul is the satay broth: a thick spicy paste of peanut, sesame, dried shrimp, dried fish, chili, scallion and garlic, diluted into soup. Alkaline oil noodles are blanched and covered with this broth, topped with a choice of fried tofu, squid, shrimp, lean pork, duck intestines or oysters. Each sip is spicy, gently sweet and rich with peanut aroma, while the noodles spring up and absorb the broth. Xiamen locals eat them at breakfast, lunch and late night, with small shops everywhere. Around Zhongshan Road and the old markets, a loaded bowl best conveys the hearty character of southern Fujian.
