🍽️ Jieyang Kway Chap

📍 Province: Guangdong 🏙️ City: Jieyang
Introduction:
Rice-sheet gravy with offal and egg.
Detailed Introduction:
Jieyang Kway Chap belongs to the same Chaoshan family as Shantou's version but with its own emphasis. In Jieyang, freshly steamed rice sheets are cut into wide strips and simmered in a clear broth of pork bones and braised pork; the soup is clearer than Shantou's, and the rice strips softer and silkier. Toppings center on braised pork intestine, marinated egg, braised liver and dried tofu, neatly sliced and drizzled with a spoonful of master stock. In Jieyang's old city, kway-chap stalls sit next to beef noodle shops and oyster-omelet stands, completing the picture of a Chaoshan breakfast street. The bowl is light and fresh, the strips slippery, the braised aroma rich; it is the everyday early-morning taste of Jieyang households, and lets visitors taste the subtle differences even within the Chaoshan triangle.
