🍽️ Jieyang Raw Cured Seafood
Introduction:
Raw shrimp and crab cured spicy-sour, addictive.
Detailed Introduction:
Jieyang Raw Cured Seafood is a typical Chaoshan coastal cold dish that lives on freshness. Just-landed shrimp, roe crab and blood clams are washed and placed straight into a marinade of garlic, chili, soy sauce, fish sauce, vinegar, cilantro and sesame oil, then chilled for a few hours. Never heated, the seafood keeps its natural sweet tenderness; each bite is icy, savory, lightly spicy and sour, with rich creamy crab roe and springy shrimp. Locals half-jokingly call it a Chaoshan 'poison' because it is so addictive. Fresh, hygienic ingredients are essential, and it is best enjoyed with plain congee or beer, making it the most sought-after cold seafood platter at Jieyang's summer roadside stalls.
