🍽️ Jingzhou Fish Cake
Introduction:
Fish cake made from minced fish, fresh and tender.
Detailed Introduction:
Jingzhou fish cake is a traditional delicacy of Jingzhou in Hubei's Jianghan plain. Fresh local freshwater fish is carefully deboned, pounded into a fine paste, mixed with egg white, starch and a touch of pork fatback, then steamed until set. The result is snowy white, silky yet springy, with almost no bones and a clean, sweet freshness. It can be sliced and steamed on its own, added to soups, braised dishes or hotpot, and is often served thickly cut with a light ginger-soy dip at family tables. When pan-fried lightly, the soft interior picks up a delicate golden crust, a popular home-style variation. On local banquet tables it often opens the meal as an auspicious first course, and is best enjoyed hot to fully appreciate its tender, boneless texture.
