🍽️ Jinhua Ham

📍 Province: Zhejiang 🏙️ City: Jinhua
Introduction:
Aged cured ham, Zhejiang umami king.
Detailed Introduction:
Jinhua ham is a traditional celebrated product of Jinhua, Zhejiang, rooted in the region's curing craft. Hind legs of the local two-end-black pig are cured, washed, sun-dried, fermented and air-aged over many months. The finished ham has a glossy yellow skin, ruby-red lean meat and jade-like fat, and a rich, deep aroma, salty yet savory with a mellow finish. It is the umami backbone of Zhejiang and Jiangnan cooking, used to build soup stocks, enhance stir-fries, and steam or braise dishes; a small piece elevates the whole pot. It is both a prized ingredient at upscale banquets and a cherished flavoring kept in Jiangnan kitchens, renowned far beyond the region.
