🍽️ Jinyun Baked Cake

Baked cake with preserved mustard and pork.

Jinyun baked cake is the signature snack of Jinyun County in Lishui, Zhejiang, found at roadside shops across southern Zhejiang. Filling is made of preserved mustard greens and pork belly, wrapped in dough, rolled into an oval, sprinkled with sesame, then stuck onto the inner wall of a charcoal oven. Fresh from the oven, the crust is golden, crisp and layered, and the saltiness of the preserved greens together with the pork fat is drawn out by the charcoal heat; a hot bite releases savory juices. One cake with a bowl of wonton or tofu soup is a classic local meal. Famous for its oven-fresh aroma, it has spread from the southern Zhejiang countryside to streets nationwide as Jinyun people took their baking tradition on the road.
