🍽️ Steamed White Fish
Introduction:
Songhua River white fish steamed plain, delicate.
Detailed Introduction:
Steamed White Fish is a signature river-fish dish of Jilin City, along the Songhua River in Jilin Province. It uses fresh white fish caught in the Songhua, prized for its tender flesh and a delicate layer of fat under the scales. Plain steaming is the preferred method, as it best preserves the fish's natural sweetness. It is seasoned simply with scallion, ginger and a splash of cooking wine, steamed over high heat for a short time, then finished with a spoonful of hot oil and light soy sauce to wake up the aromatics. The flesh comes out pearly, tender and almost melt-in-the-mouth, with a clean, sweet finish and no muddy taste. Regarded locally as a premium river delicacy, it is a centerpiece for banquets and is best enjoyed hot, dipped in the savory pan juices.
