Golmud
🍽️ Liangpi
Introduction:
A type of cold noodle, sour and refreshing.
Detailed Introduction:
Niangpi is a popular cold-noodle snack of Golmud and the Qinghai-Tibet region. Wheat batter is steamed into sheets, cut into wide, springy strips, and dressed with vinegar, chili-oil, salt, mustard and garlic water, with wheat gluten and cucumber. It hits tangy-spicy sharpness, slippery and chewy, where the bite of mustard and the aroma of chili combine, carrying a rougher highland character than lowland versions. Golmud versions prize even thickness and freshly poured chili oil, often eaten as afternoon or late-night snack. A refreshing way to pass leisure in this highland town, best paired with brick tea to cut richness.
