🍽️ Mengzi Cross-Bridge Noodle

📍 Province: Yunnan 🏙️ City: Honghe
Introduction:
Birthplace of crossing-bridge noodles.
Detailed Introduction:
Mengzi, in Honghe Prefecture, is the birthplace of crossing-the-bridge noodles, and the local version is the most elaborate of all. A bowl of scalding chicken broth arrives sealed with a layer of chicken fat to hold the heat, and diners cook raw ingredients into it in order: thin slices of meat, then rice noodles, vegetables and quail eggs, poaching in the hot soup. The side plates number more than a dozen, including ham, chicken, fish slices, tofu skin, garlic chives and bean sprouts. The broth is fresh and blistering, the noodles slippery and tender, cooked and eaten in the moment, with meat and vegetables layered in. Old Mengzi shops insist on chicken broth, goose fat and rolling-hot soup cooked to order, making this the representative of Yunnan's rice-noodle culture. It is both an everyday Mengzi breakfast and the ritual dish visitors to Yunnan must experience.
