Introduction:
Zhuang-style roast piglet, crisp skin.
Detailed Introduction:
The Zhuang Roast Suckling Pig is a traditional grand dish of the Zhuang country on the China-Vietnam border in Chongzuo, southwestern Guangxi, famed for crisp skin and tender meat. A suckling pig is cleaned, seasoned inside and out with spices, salt and sugar, then impaled on a spit and rotated over fire while basted with oil until the whole body turns golden, glossy and glass-crisp. The skin is paper-crisp, the meat tender and juicy, eaten with sugar or plum sauce so sweetness meets crunch. On the southwestern border, Zhuang festivals and weddings feature a whole roast piglet as a lavish centerpiece. Roasted whole and sliced fresh, it requires real skill, sharing the Cantonese roast tradition with a Zhuang border character. Visitors to Zhuang villages in Chongzuo often enjoy it at festivals, tasting the generous, hearty hospitality of the Zhuang.
