🍽️ Fuding Meat Slice
Introduction:
Taro-starch beaten pork, tangy.
Detailed Introduction:
Fuding Meat Slices are a popular street snack from Fuding, in Ningde, Fujian. Fresh pork hind leg meat is repeatedly pounded until sticky, then mixed with sweet-potato starch, rolled thin and scraped by hand into boiling water. The cooked slices turn a translucent pinkish-white in the broth, with an extraordinarily smooth, springy bite that almost melts without hard chewing. The soup is seasoned with rice vinegar, white pepper, chili, seaweed, scallion and a dash of lard, giving it a tangy, peppery, appetizing kick. It is both a daily morning bowl for Fuding locals and a common night-market bite; vendors scrape and cook to order, and it is best eaten piping hot to appreciate its slippery texture.
