🍽️ Puning Rice Roll
Introduction:
Puning rice roll with braised-style sauce.
Detailed Introduction:
The Puning Rice Roll is a branch of Teochew rice rolls from Puning, Guangdong, quite different from Guangzhou's rice-noodle rolls. Rice batter is steamed into a thin, translucent sheet wrapped around egg, pork, shrimp and greens, rolled and cut, then flooded with a ladle of special sauce. The hallmark of Puning style is its braise-like savory sauce, blended from soy, fish sauce and master braising liquid—salty, savory and slightly sweet. The wrapper is thin, smooth and pliable, the filling fresh and juicy, and the rich sauce clings to the roll. Puning people often start the day with a roll plus vegetable soup or soy milk, with street shops steaming from the early hours. It is an everyday street flavor and, carried by Puning's widespread migrant population, one of the most recognizable tastes of Teochew breakfast culture.
