Kashgar
🍽️ Roast Lamb Skewer
Introduction:
Mutton marinated with cumin and chili, charcoal-grilled, aromatic.
Detailed Introduction:
Charcoal-grilled lamb skewers are the smokiest street food of Kashgar, Xinjiang. Fresh mutton is cut into thumb-sized chunks, fat and lean alternated on iron skewers, dusted with cumin, chili powder and salt, and turned over charcoal. The chunks are charred outside, juicy within, with cumin aroma and smoky char combining, nearly gameless. Kashgar versions are cut and skewered to order, fat-and-lean paired, the fire rendering the oil, cooked to about 80 to 90 percent done for the best tenderness. Often eaten with nang bread, strip the meat off the skewer and bite the bread, the most tempting taste of Kashgar's old-city night market.
