Zibo barbecue is a street-style grill from Zibo, Shandong, that swept across China, famous for its unique wrap-everything-in-a-small-pancake style. A small grill comes to the table, and guests grill their own skewers of marbled meat, dipping them in a dry rub of cumin, chili and crushed peanut. The ritual is specific: take a paper-thin small pancake, spread the dip, lay on the grilled skewer, add scallion strips, roll it like a wrap, then pull out the skewer. One bite layers meat, scallion, pancake and spice blend, affordable and interactive. In 2023 it went viral nationwide for its honest flavors and warm, down-to-earth street atmosphere, becoming a new calling card of Shandong cuisine.
